Vegetable Panini

This is one of the easiest, most delicious sandwich recipes. It is also very customizable to your tastes, the sky is the limit. Experiment with the vegetables that you prefer, use a different flavor pesto, or try using hummus.

Whole Grain Ciabatta (roll or sliced bread)
Basil pesto for spreading on the bread
Fresh Spinach
Fresh sliced tomato
Sliced onion
Roasted Red Pepper
Sliced avocado
Slice of cheese, optional (your choice of flavor)

Spread the pesto on the bread and layer the remaining ingredients. Place in a panini press and toast or use a saute pan and place a foil covered brick on top of the sandwich to keep it pressed flat.

When toasted and golden on both sides, enjoy!
